Polymarket: Update build and secret configuration

**Description**

Adjust Dockerfile and cloudbuild.yaml to support `AUTH_TOKEN` from Secret Manager, add `create-env` script and package metadata, update .gitignore and .env.example, and clean up README deploy instructions.
