fix(desktop): use modern logo for Tauri app/installer icons

Regenerate the full src-tauri icon set (icns, ico, PNG sizes, Windows
Square/Store tiles) from the modern logo (logo512) so the desktop app and
macOS DMG no longer show the legacy 'S' icon.
